If you do this you have to have a giant deep horn sound or something originating from the sea monster's location. Everytime after the 1st time it will scare the crap out of people!

Not for ambient wildlife, but part fo the game where a harpooned whale might be sold for cash to make repairs on the ship! Or the death and sinking of a cracken.

SOMETHING to break up the routine of pounding ship after ship. What about when sinking a ship... we their their booty? they had on board?

If not the Kraken, then giant sea serpents and/or squids. Either have it as a random encounter at sea or as an objective to defeat the creature to retrieve treasure on an island/dock that it is guarding.
