I know this is a tough one and am not holding my breath, but the essence of naval warfare in the Age of Sail was working the wind, "getting the weather gauge" of the opponent. Having real wind, not being able to sail closer than 60 deg to the prevailing, being becalmed behind islands, having wave trains agree with prevailing wind direction... all this would add so much challenge, skill, and immersion. (Though maybe immersion is not the luckiest word to use about a sailing simulator!)
